Dandelion is a powerful herb with beneficial effects on many systems of the body, including the liver, kidneys, immune system, and circulatory system—all which serve to lower inflammation, open detoxification pathways, and make room for hormonal balance.


The main way dandelion can help with hormone balance is through its positive effects on the liver and estrogen detoxification. Bitter greens like dandelion leaf help produce bile to “flush” out metabolized estrogens.


Addressing estrogen dominance can have a massive effect on the rest of your hormones, including thyroid and adrenal hormones.

Spring dandelion salad with goat cheese

Ingredients

  • 1 bunch dandelion greens, chopped
  • 3 tbsp. fresh goat cheese*, crumbled
  • (*could be replaced with radishes for the vegan version)
  • 1 tbsp. toasted pine seeds
  • 6 tbsp. extra virgin olive oil
  • 2 tbsp. umeboshi plum vinegar
  • sea salt & black pepper


Instructions:

  • Combine dandelion greens in a large mixing bowl.
  • Whisk olive oil & vinegar
  • Season with sea salt and freshly ground black pepper to taste.
  • Pour dressing over the salad
  • Garnish with fresh goat cheese, pine seeds & serve.
