Spring is a new beginning. The sight of the green color of tender young plants nourishes the soul through the eyes. Appetite for food decreases and the body naturally cleanses itself. 


This is the season to focus on the liver and gallbladder. The first signs of liver disharmony are emotions related to anger: impatience, arrogance, stubbornness, frustration. Mood swings are also liver-related. According to Traditional Chinese medicine, when the liver is in harmony, there is never stress or tension.


In spring we are naturally eating less or even fast in order to cleanse the body of fats and heavy foods of winter. The diet should be the lightest of the year – young plants, fresh greens like watercress. Try this simple recipe to bring lightness and freshness to your body and mind this spring season.

Watercress soup

Ingredients:

1 large onion, chopped

1 tbsp. coconut oil

2 very large cloves garlic, chopped

1 cup celery leaves

6 cups water

Sea salt and black pepper  to taste

1 bunch watercress, washed well, large stems removed, and chopped


Preparation; 

  1. In a stockpot, sauté onion in oil over very low heat until translucent
  2. Add garlic and celery tops and sauté slowly (approx. 5 min. more)
  3. Add water, sea salt and continue simmering for 10 min.
  4. Puree soup in blender for several min. until very smooth
  5. Return to stockpot; adjust seasonings
  6. Drop watercress into soup
  7. Bring to a boil, turn off and cover for a few min. before serving
